  1. Heat syrup in a saucepan until it reaches 240 degrees, which is the soft ball stage in candy making terminology. "Soft ball" means that when a tiny piece of the mixture is dropped into a cup of soft water, it forms a 'soft ball' that can be flattened when taken out of the water.
  2. Remove from heat and let cool until it's at 200 degrees.
  3. Stir until sugar crystals form in the syrup. It should be very sugary.
  4. Pour into a candy mold.
  5. When the candy is cool, remove from mold and enjoy.

  • 2 tablespoons lemon juice
  • 1 cup apple juice
  • 1/2 cup pure maple syrup
  • 1 pinch ground cloves
  • A few teaspoons of cinnamon for dusting

Instructions

  1. Preheat oven to 375 degrees.
  2. Peel and core apples, removing seeds as you go.
  3. Mix raisins and cinnamon, adding a few drops of water to make the cinnamon stick.
  4. Stuff apples with raisin and cinnamon mixture.
  5. Set in baking dish, making sure there's at least one inch between them to ensure even cooking.
  6. Combine lemon, apple juice, maple syrup and cloves until well mixed.
  7. Pour this mixture over apples.
  8. Sprinkle with cinnamon.
  9. Bake uncovered for 45 minutes. Every ten minutes, baste apples with juice and syrup mixture from the bottom of the pan.
  10. Serve warm.
